Pretty sure it was the name that threw me, but it took me over a decade to figure out that Joe's Bakery hosts some of the finest Mexican breakfast in this town, and has been doing so under the guidance of the founder's family since 1962! I met up with Joe's grand-daughter Regina Estrada for a tour through the years at Joe's - and dang right I had migas before I left! Our conversation below.
